It's no secret that Delish loves cheesecake; we bake them on the reg in the rest kitchen (at least one new recipe a week!). But just because we're not afraid of a springform pan or water bath, doesn't mean we're always down to make one. Let's face it: Cheesecakes are so time consuming. Cheesecake Cookies are WAY easier.

This recipe utilizes one of our favorite baking techniques: using a shot glass to make cookie cups! Basically all you're doing is baking cookie dough in muffin tins then pressing a (greased) shot glass into the centers of the cookie (while they're still warm!) to create a well, which is your perfect little crust! Genius, no?

Once the crusts are baked, the rest is a breeze thanks to the no-bake cheesecake filling. There's no need to worry about how jiggly the centers are or about ending up with a cracked crust. All you need to do is whip together cream cheese, Cool Whip and some sugar. You got this!

Flavorwise, sugar cookie with vanilla centers is classic and lovely. But adding cinnamon-sugar to give it that snickerdoodle vibe? Well that's next level. DO IT.
