You’ll ‘Never Go back to Store-Bought’ Once You Make Nancy Fuller’s Homemade Pesto

There’s no better summer dish than pesto pasta (sorry, don’t try to convince us out of this). It’s fresh, herbaceous, a little spicy, and basically just tastes like summer on a plate. So when Nancy Fuller shared her go-to pesto recipe, we immediately saved it for future reference. Her easy and basic pesto comes together in just a few minutes and is totally foolproof. You’ll get perfect pesto every time you make it.

“Let’s make some homemade pesto,” Fuller wrote in a recent Instagram caption. “Once you start making pesto homemade, you’ll never go back to store-bought!! It’s just one of those recipes that is so simple and tastes SO fresh.”

Fuller doesn’t use exact measurements but rather adds ingredients by eye, which means you can give a take to create your perfect ratio of flavors. She starts by putting a good helping of fresh basil leaves, two cloves of garlic (“or to taste,” as she writes in her caption), about a 1/4 cup of pine nuts, and roughly a 1/2 cup of grated parmesan cheese into her food processor. While she blitzes, Fuller drizzles olive oil into the basin to get the right sauce-like consistency.

“Store in an air-tight container and keep in your refrigerator!!” she adds at the end of her caption.

“Yummmmm! I add a little lemon juice too,” one person commented on Fuller’s post. Another said, “You are speaking my language!! Pesto perfecto!”

“So delicious on meats and pasta,” someone else wrote, with another adding, “Make at least 12 quarts every summer!”

Pesto is such a versatile sauce and you can use it on just about anything from pasta and sandwiches to meats and salads. It has such a simple yet bold flavor that it stands out in just about any recipe or dish you use it in. Up the parmesan cheese to make it more creamy, or go light on the olive oil if you want to make it more spreadable rather than saucy. And, of course, garlic lovers can toss in a few more cloves to get that raw garlic spice they crave.
