Little Big Town singer Kimberly Schlapman loves cookbooks. One of her favorites right now is Reese Witherspoon’s Whiskey in a Teacup, and she recently showed Yahoo Life how to make Reese’s spin on a classic dish – chicken pot pie.
KIMBERLY SCHLAPMAN: I love cookbooks. One of my favorite new cookbooks is Reese Witherspoon's "Whiskey in a Teacup." In Reese's cookbook it's called chicken pot pie casserole, which I love. That's so Southern. You want to do it? Let's do it.
So we're going to start with 2 eggs, and we're going to whip those up real quick. Just whip them up really, really, really good.
All right, now let's put two cups of hash browns right in here, and you're just going to fold them. Just fold them right in. So just coat it really well in there. Make sure that egg is all over those hash browns.
Now, just put them right down in the bottom. Spread them out. Press them down a little bit.
Let's start with our veggies. Every good Southern casserole starts with onions-- onions, and we're going to do some carrots, a couple of carrots. A cup of celery, the great trinity of cooking. And we're going to let this cook for three to four minutes. Remember that they'll also cook in the oven, so you don't have to cook them all the way through here on the stove top.
Let's add some frozen peas, another cup-- a cup, a cup, a cup, a cup. It's so pretty. It's so colorful. There you can see it a little bit.
We're going to grab our mixing bowl again, and let's put in our chicken. This is a cup, or I did a little bit more than a cup of chicken. And then all our veggies go right in here.
Now we're going to add a can of cream-of-mushroom soup. Any good Southern girl was raised-- or Southern boy, whatever, was raised on good creamy soup. Now I need some salt and some pepper.
We're just going to spread this into right on top of those hash browns. I had never seen hash browns included in a chicken-pot-pie recipe until this one, and I love it. It's so, so yummy. And then we're just going to lay this right on top of our hash browns.
We're going to take a puff pastry. You're going to take it, and you're going to lay it right on top of the casserole like a little blanket. And you're going to throw it in the oven. Just watch it because this puff pastry is going to get beautiful and golden brown. It's delicious, y'all.
