This Lemon Blueberry Cake Tastes Like Spring Break

Cake from scratch can be intimidating-so much so that most of friends would never even think of baking a cake from scratch. But doctoring a boxed mix is one of my favorite life hacks. If you know how to read the directions on a box, you can turn a plain vanilla cake batter into something much more sophisticated.

You'd probably never guess that this recipe comes from a box. But all I did to class it up was stir lemon juice and zest and fresh blueberries into the batter. (Bonus: Frozen blueberries work, too.) The result is a layer cake of epic results: No guest will ever know this is from a box. The frosting is a super simple vanilla buttercream with more lemon flavor, which you might think is lemon overload, but I assure you, it's perfect.

When frosting a layer cake, a few things to keep in mind: First, you want to put a small amount of frosting onto the bare cake platter to help your first cake layer stay put. The last thing you need is an unwieldy cake on your hands. Second, put parchment strips down on your cake plate, which will make sure the excess frosting-oh, there will be excess-doesn't stay on your platter looking all sloppy. Remove them after frosting and you'll look way more profresh.
