This “Legendary” Cookie Dough Is So Good, I Signed Up for Grocery Delivery Just to Get It

I used to partake in a bit of baked goods-related trickery in college. It was a sort of sweets sleight of hand, when I realized how much I loved making Chocolate Covered Katie’s chickpea cookie dough in all its many forms. I’d bake a cookie pie for my roommates and watch everyone devour it. They never even knew it was made of BEANS (two cans!) and gluten-free. I was drunk on the power!

I’ve already sung my praises about how Hungryroot’s subscription plans have gotten me to eat more vegetables, including this ready-to-eat cookie dough. Much like Katie’s recipe, Hungryroot’s Almond Chickpea Cookie Dough has a base of blended chickpeas, almond butter, and tahini that’s then punctuated with brown sugar, maple syrup, and vegan chocolate chips. Completely egg-free and vegan, this batter immediately still tastes rich and buttery like a traditional cookie dough, so much so that one bite made me immediately go, “Um, how?”

Plus, it’s not just for eating straight out of the tub, either. You can also scoop it into balls and bake into cookies (as you should — I like to add a sprinkle of salt prebake!)

What’s the Best Way to Eat Hungryroot Almond Chickpea Cookie Dough?

Straight out of the tub, this legendary Almond Chickpea Cookie Dough gets no notes from me. It’s next-level gooey and studded with chocolate, but with enough salty-buttery richness to balance it all out. Baking the dough will also be a good time, for all the soft, melty cookie lovers out there. I’m more of a team captain for the Crunchy Cookie squad, but the dough did yield a supremely melty soft-baked cookie I was not mad about.
