Use leftovers for this quick, easy flatbread pizza recipe

Some nights, deciding what to have for dinner can be a struggle. So, let me introduce you to a little secret: flatbread pizzas.

Don't get caught up on the word "pizza." There are many different ways to make a flatbread pizza that isn't a traditional Italian pizza, made with tomato sauce and mozzarella cheese (though you can go the traditional route if you choose). These flatbread pizzas can be made from any combination of flavors and ingredients from around the world.

They're also a great way to use up some of the ingredients in your pantry, fridge and/or freezer. They take under 30 minutes to make, and clean-up is a breeze.

Easy dinner idea

Flatbread pizzas can be made with a flatbread, pita or naan as the base. For extra convenience, add some precooked frozen protein and vegetables for your toppings after defrosting them on the stove or in the microwave.

Assembling the pizzas on parchment paper on a baking sheet is key for a super quick clean-up!

Southwest chicken flatbread:

  • Flatbread, pita or naan.

  • Chunky salsa (avoid a watery salsa).

  • Chicken (or any protein of your choice).

  • Roasted bell peppers.

  • Roasted corn.

  • Shredded cheese.

Spread the salsa on your base, then top with chicken, vegetables and cheese.

Place the assembled pizzas in a preheated oven until the cheese melts and the pizza is heated through.

Bonus tip: If you want an extra crispy crust, put the pizza directly on the wire rack and put the baking sheet on the shelf underneath to catch any spillage.
