In this episode of Cooking for Comfort, Kelly Killoren Bensimon, former cast member of The Real Housewives of New York City, has teamed up with her daughter Teddy, 20, to offer up their delicious and guilt-free take on vegan chocolate chip cookies.
KELLY KILLOREN BENSIMON: Hey, Yahoo, it's Kelly Killoren Bensimon with Teddy Bensimon. And she's watched me cook for her for years. And now, she's baking cookies for me.
TEDDY BENSIMON: This is cooking for comfort without all the calories.
I eat to feel good. Whatever makes feel more energized and happy, that's what I want to put in my body. All these ingredients are pretty good for you.
KELLY KILLOREN BENSIMON: They do give me a lot of energy. And I think using this as my new diet, just eating all cookies all the time.
TEDDY BENSIMON: I'm starting off with 1 cup of 1/2 monk fruit sugar and 1/2 coconut sugar. Next, we have 1 cup of creamy unsalted almond butter, one vegan egg, 1/2 of a tablespoon of vegan butter, 1/4 of a cup of semi-sweet vegan chocolate chips, and we're going to be using 1/2 of a teaspoon of baking soda. I have my ingredients mixed up.
I've already got my oven set to 350. I got my assistant here, and I'm going to make these into little balls.
KELLY KILLOREN BENSIMON: All right, let's put these in. Let's see what they look like.
TEDDY BENSIMON: Now we're at the hardest part of the whole entire process, waiting.
KELLY KILLOREN BENSIMON: The waiting.
Just a little [INAUDIBLE] on the floor.
TEDDY BENSIMON: So here are the cookies. They're fresh out of the oven. And there you have it, your healthy and delicious vegan cookies.
KELLY KILLOREN BENSIMON: You guys are going to love them at home. I cannot wait. I want to hear all your comments.
