Katie Lee Biegel’s Zesty Caesar Salad Pizza Is a Perfect Quick & Easy Summer Meal

At the end of a sun-filled beach day, the last thing you want to do is go home and have to make a complicated meal for dinner. So on those summer nights when you need something quick and easy, make Katie Lee Biegel’s Caesar salad pizza. It takes under a half hour to prepare and you can use store-bought ingredients to make this meal even easier.

“Caesar Salad Pizza — two of my favorite things in one,” Biegel wrote in a recent Instagram caption. “It’s the lemon zest on the hot pizza that really does it for me.”

To make this pizza, first start with a ball of pizza dough that you’ve brought to room temperature. This can be homemade dough, or dough from the store — just make sure it’s warm enough to spread. Grease a baking sheet with olive oil and then spread that dough into a rectangular shape to match the dimensions of the pan.

In another small bowl, add olive oil, oregano, and garlic powder, and give that a good stir. Brush that mixture onto the pizza dough before seasoning the dough with flaky sea salt and topping with shredded mozzarella. Toss the dough into the oven (or on the grill!) before making your Caesar salad.

Toss chopped romaine lettuce with your favorite Caesar dressing of choice (either freshly made or from a bottle) and set that aside until the dough is golden brown and that cheese is bubbling. Once you pull the pizza dough from the oven, grate fresh lemon zest over the melted cheese and then add your dressed romaine and finally sprinkle some grated parmesan cheese over the entire thing — you’re then ready to eat!

This meal is fresh, super flavorful, and combines so many different crunches, that you’ll be craving it all summer long.
