Katie Lee Biegel Just Shared a Genius Hack for the Most Flavorful Chicken Cutlets

We fully agree with the wise words Katie Lee Biegel wrote on her blog when describing her recent chicken cutlet recipe: “Chicken cutlets are just chicken breasts cut in half horizontally for speedy cooking, but we all know they are really the stuff dreams are made of.”

In a new Instagram reel, Biegel took classic cutlets to the next level by swapping out a standard ingredient for a genius alternative, giving her dinner a boost of flavor. Here’s the ingredient switch you’re going to want to try immediately.

You may be used to breading your chicken breasts with breadcrumbs to give them that extra crunch, but Biegel’s trick is herbaceous while preserving the crispy exterior you love.

“Instead of the usual breadcrumbs, I coat the chicken in falafel mix, which gives a great texture and a flavorful blend of herbs and spices,” Biegel explains.

When breading her boneless, skinless chicken, Biegel covers each piece in falafel mix, which already contains an array of seasonings so you won’t have to dig through the spice cabinet yourself. If you love the taste of garlic, onion, parsley and other herbs blended together, you should definitely try out this hack. You can buy pre-made falafel mix at most standard grocery stores if you don’t already have some on hand.

The Kitchen host tops off each cutlet with a fresh five-ingredient salad: baby arugula, fresh dill, grape tomatoes, red-wine vinegar and extra-virgin olive oil.
