We Just Discovered a New, Better Way to Eat Rice Krispies Treats

Over the years we've tried numerous ways of upgrading Rice Krispies Treats: browning the butter, using different kinds of cereals, toasting the treats over a campfire. And thanks to New York Times food writer and cookbook author Eric Kim, we just discovered a new way to upgrade the classic sweet—Black Sesame Rice Krispies Treats. With already more than 60,000 likes on the New York Times' Cooking Instagram page, the video is clearly sparking excitement among food fans.

But as good as the recipe looks, we have to say there was another detail in Eric's video that really made us sit up and take notice.

He begins by browning butter in a skillet, which we must admit is a strong start. Next up, black sesame seeds, which are cooked for 1-2 minutes. Marshmallows are melted, salt is added and Eric stirs in a splash of toasted sesame oil. Eric is a flavor genius and that talent is showcased here by the way he layers different nutty flavors: brown butter plus toasted sesame seeds plus toasted sesame oil. When all of this nuttiness is combined with the sweet elements, there’s a real depth of flavor to the Rice Krispies Treat.

He inverts the treats onto a cutting board and cuts them into bars and just when you're like "ok great," he hits you with the real tip here. "They're really good as bars," he says, "but you should really eat them as cereal."

And with that, the needle skips and the record comes to a stop.

The next shot is Eric casually tossing smaller cubes of Rice Krispies Treats into a bowl and pouring on some milk. The final shot of the video is him taking a bit and saying "mmm." Mmmm indeed!

And while it might initially seem very unusual to eat Rice Krispies Treats as cereal, if you take a beat it makes total sense. First of all, Rice Krispies are, indeed, cereal. Also consider that people eat Frosted Flakes and Cocoa Puffs and Fruity Pebbles and Lucky Charms, which feature marshmallows in a starring role. Rice Krispies Treats cereal seems on par with those sweet breakfast options.
