While it does not pressure-cook, the Aura Pro boasts microprocessor technology to set and maintain exact cooking time and temperature. That precision works with the built-in sous vide function, which has a temperature range from 104 to 194 degrees, making this model a standout in the Instant Pot family.

“This is a much easier option and it cooks a lot more evenly,” shares a satisfied Amazon shopper. “I made steaks first and they came out perfectly. Then I did sous vide tamales, basically just using parchment paper instead of husks and then vacuum sealing them before submersing in temp controlled water. It really kept the flavor in that is usually lost when steaming.”
