Warning: These chocolate cookies are dangerously good. They're like fudgy crinkle cookies and totally irresistible. But the best part? The peanut butter filling. It makes the whole cookie taste like a peanut butter cup. Reese's fans, where you at?
When we made our original peanut butter-stuffed cookies, we thought they were the most amazing treats ever. We still love them … but after introducing chocolate, we hereby decree that these are the best stuffed cookies of all time. Need I remind you that the combination peanut butter and chocolate is the ultimate duo?
For anyone that doesn't like to bake, don't be scared. These are super easy to whip together, despite how sexy and legit they look.First you need to make the filling, which takes no time at all. Simply mix together melted peanut butter and powdered sugar, then scoop the mixture into balls and freeze them until solid, about 1 hour. Next comes the cookie dough — also very painless. Whip together some butter and sugar, throw in an egg and vanilla then stir in your dry ingredients (cocoa powder, flour, baking soda and salt).
The last step before baking: stuffing the cookies. Flatten tablespoon-sized piece of dough into small patties, place a frozen peanut butter filling on top, then add another piece of dough on top. Seal the edges, roll it into ball, and toss it in sugar. It'll be huge, which means so will your cookies! There's no real way around it, but I have a sneak feeling you won't care one bit.
