Ina Garten's Stunningly Easy Lemon Pasta & Shrimp Is the Perfect Meal for Spring

Ina Garten’s done it again. She made a meal so delightful — and so easy! — that we are actually looking forward to cooking dinner this week. (Only Ina could make mid-week cooking fun!) The Barefoot Contessa just shared her fabulous Lemon Pasta and Roasted Shrimp recipe that will be your new springtime staple.

In a new video posted to Food Network’s YouTube Channel, Garten walks viewers through this light and delicious recipe. “You’re not going to believe how easy this is,” Garten promises in the video. She added in the caption that it’s “the perfect meal to prepare in a pinch.”

She starts by roasting peeled and deveined shrimp. While that’s in the oven, she boils water for the pasta and adds a few special ingredients. Garten uses the “really fine” capellini pasta for this recipe. And while that’s boiling, she starts the third (and final!) part of the meal: the flavorful sauce. It uses both lemon zest and lemon juice, as well as other ingredients, which she grates and squeezes herself.

Now it’s time to combine everything! “I love making the sauce in a big pan and then putting the pasta in, ‘cause then it soaks in, and you can cook it for a minute together,” Garten explains. She drains the pasta first, then adds it to the saucepan. At this point, your kitchen should be smelling so good and lemony!

When the shrimp is done, she pours it right into the pan and tosses everything together. It’s light and delicious, and it’s ready to eat in just 25 minutes!

“We LOVE this dish!!” one person commented. “We’ve made the capellini for ages and have always just added shrimp. Now, we’ll be roasting the shrimp. Thanks, Ina!”

“I made this tonight for my parents. Delish!” another person praised. Other suggested tweaks, like adding mushrooms and sundried tomatoes or using bucatini pasta instead of capellini. No matter how you prepare it, this dish is going to quickly earn a permanent spot on your menu.

Spring is all about fresh food bursting with flavor, and nothing says that more than this lemon and shrimp recipe!
