The healthy cookie alternative that this former New York housewife swears by

Welcoming us into their kitchen, Kelly Bensimon and her 20-year old daughter Teddy, share a delicious and guilt-free dessert recipe: vegan chocolate chip cookies. Like many of us during quarantine, the mother-daughter duo has been challenging themselves to cook healthier meals and explore new ways to cook together. With so many vegan options available, they explain how swapping out some key ingredients from your classic favorites will not only taste great, but will be great for you.

KELLY KILLOREN BENSIMON: Hey, Yahoo. It's Kelly Killoren Bensimon with Teddy Bensimon. And she's watched me cook for her for years, and now she's cooking, making cookies for me.

TEDDY BENSIMON: This is Cooking for Comfort without all the calories.

[MUSIC PLAYING]

I eat to feel good, Whatever makes me feel more energized and happy, that's what I want to put in my body. All these ingredients are pretty good for you.

KELLY KILLOREN BENSIMON: They do give me a lot of energy. I might be using this as my new diet, just eating all cookies all the time.

TEDDY BENSIMON: I'm starting off with one cup of half monk fruit sugar and half coconut sugar. Next we have one cup of creamy unsalted almond butter. One vegan egg. One half of a tablespoon of vegan butter. And then I have one fourth of a cup of semi-sweet vegan chocolate chips. And we're gonna be using half a teaspoon of baking soda.

I have all my ingredients mixed up. I've already got my oven set to 350. I got my assistant here. OK, so now I'm gonna make these into little balls.

[MUSIC PLAYING]

I'm also taking a little extra pinch of salt on top of the cookie.

KELLY KILLOREN BENSIMON: Look at how great these look, you guys. Ted did a great job. All right, let's put these in. Let's see what they look like.

TEDDY BENSIMON: Now we're at the hardest part of the whole entire process. Waiting.

KELLY KILLOREN BENSIMON: The waiting.

TEDDY BENSIMON: So here are the cookies. They're fresh out of the oven. I recommend you let them cool for at least five minutes. If you can do 10 minutes, that's a lot better.

KELLY KILLOREN BENSIMON: If you can wait.

TEDDY BENSIMON: And there you have it, your healthy and delicious vegan cookies.
