Greeley Mexican restaurant to take over Windsor's former Howlers & Growlers

Luna's Tacos & Tequila opened in downtown Greeley in 2018. It is set to expand with a new location in Windsor in spring 2024.

Less than two months after Windsor taphouse Howlers & Growlers closed its doors, a new eatery has set its eyes on the vacant restaurant building.

Greeley Mexican restaurant Luna's Tacos and Tequila signed a lease for the space at 1246 Automation Drive on Wednesday, with plans to open a second location there in early spring, Luna's owners Sam Corliss and Brian Seifried told the Coloradoan on Thursday.

The former Howlers & Growlers building was "an interesting find," Seifried said, noting that while it is about 120 years younger than Luna's Tacos and Tequila's flagship building in downtown Greeley, it has a remarkably similar layout with both buildings having rooftop patios, two stories, and upstairs and downstairs bars.

The new Luna's Tacos and Tequila location will offer largely the same food and drink options of its Greeley predecessor, Corliss said. The Mexican eatery's menu is 90% gluten-free, something Corliss said she's excited to bring to Windsor since Howlers & Growlers had previously built a wide range of gluten-free menu items.

Seifried said the upcoming months will be spent turning the modern Windsor building into a space that honors the vibe Luna's Tacos and Tequila has been able to cultivate in downtown Greeley. The building's existing self-pour beer wall — a central concept of Howlers & Growlers — will not be incorporated into the forthcoming Mexican restaurant, Seifried said.

"We just want to create a fun place for people to gather," he added.
