Greek Yogurt Pancakes Will Fill You Up Without Weighing You Down

If this breakfast came with a soundtrack, it'd be Rick Astley's "Never Gonna Give You Up." Not because we want you to be Rickrolled for the rest of your day (please-so 2008), but because the lyrics will essentially sum up your relationship with these Greek yogurt pancakes.

Seriously. They require just four ingredients-all of which you probably have in your kitchen right now-and the end result is a stack of light, fluffy pancakes that are packed with protein, so you'll feel full long after brunch is over, but you won't feel weighed down, either.

You could use baking soda instead of baking powder for these pancakes, since the acid in the Greek yogurt will cause the baking soda to react, creating puffy, light pancakes. But, when we tested versions with baking soda, some people found that it left a bit of a salty aftertaste; one they didn't get with baking powder.

If you do want to try it with baking soda, opt for Everyday Belle's recipe; it's the best we've seen (and after testing several variations, we couldn't come up with a simple, baking soda-based one as good as hers).

Whatever you use, make sure you break up any lumps in the batter before pouring it. And, as a fair warning, this batter will be thicker than the average recipe (blame the Greek yogurt!). You'll need to use a spoon or silicone spatula to spread the batter out on the pan, so it forms a pancake shape, but the thicker batter also means it's a lot easier to flip.

Though you typically look for bubbles in the batter to know when it's time to flip, this batter doesn't really bubble. Instead, look for a lip to form around the edge of the pancake, much like IHOP's Marie Grimm suggested in her tips for making perfect pancakes. You should be able to gently slide the spatula under the pancake and flip away.
