Pretty much everyone vows to be healthy starting January 1st, but almost no one remembers the one big thing standing in the way: football. So long as games are still on Sunday, so are the cheesy dips, crispy wings, and overloaded nachos. And lots of beer. It's what makes Sunday nights not only bearable, but fun ... until Monday.

Yet as enjoyable as the crazy, salty snacks are to eat, they can make you feel pretty bloated and terrible the next day. While we would never recommend giving up, say, buffalo chicken all together (because we could never!), we do believe in balance. So on a day after overindulgence, we like to counteract our unhealthy choices with good-for-you dishes. Like Greek Sushi!

Greek sushi is essentially a cucumber roll-up filled with hummus, feta, tomatoes, dill, and kalamata olives. The cucumber is crunchy and hydrating, and with a squeeze of fresh lemon juice, each roll tastes the most refreshing snack you could ever have.

To make your own, peel super thin strips of cucumber using a vegetable peeler (Y shaped is best). Double up the cucumber slices (to create a sturdier roll), then spread a very thin layer of hummus on top. Sprinkle with tomatoes, olives and feta, being careful not to overstuff, then roll up tightly. It comes together in minutes and will be gone in seconds, but you won't ever feel guilty about it.
