The technique is the same as Primavera Stuffed Chicken, Cajun Stuffed Chicken, and Cuban Stuffed Chicken, which are all amazing. First, you cut deep slits into boneless chicken breasts, then stuff them with a bunch of fresh ingredients (and maybe some cheese too). Bake until cooked through and you have a all-in-one veggie and protein dinner.

Though we love all of our stuffed chicken recipes, our newest Greek version might be our favorite. With zucchini, red onions, tomatoes, lemon slices, dill and feta, it tastes so bright and vibrant. It has a freshness that is much needed and appreciated on a cold and dreary day.
