While we were all sitting around speculating about Little Mermaid casting (and how Gordon Ramsay as Chef Louis would be P-E-R-F-E-C-T), he was out traveling the world and making yet another TV show. His new National Geographic show Gordon Ramsay: Uncharted debuts on July 21 and is entirely different than all his other shows to date.

Here's what you need to know ahead of the premiere.

What is Gordon Ramsay: Uncharted?

According to NatGeo, they'll tell you that on Uncharted, "Gordon will embark on an anthropology-through-cuisine expedition to unearth the most incredible people, places, and flavors the world has to offer." Primarily, he'll be following locals through their day-to-days and feeding himself that way. The chef told the network the show was “a once-in-a-lifetime opportunity to explore and reconnect."

Where countries and states does Gordon travel to?

Over the course of the season, he visits six different places: Peru, New Zealand, Morocco, Hawaii, Laos, and Alaska. The first episode alone will see him scaling cliffs and searching far and wide for the perfect Peruvian potato.

How is this different than any of his past shows?

Any real Gordon fan will know that most of the chef's shows (or at least the ones popularized in America) are centered in or around his restaurants. Hell's Kitchen is a prime example of that.

MasterChef, which is currently in its 10th (!) season, is pretty stationary as well, even though it's based in a separate filming kitchen. Also, it seems Gordon's attitude changes when he's traveling to far away places and learning from other people rather than teaching them about food himself; by all reports so far, the chef is a kinder, more patient person this time around.

What are people saying about the show so far?

Ah, yes. Those reports are also saying this is the first show of Gordon's in a while "worth watching." Forbes fawned over an early glimpse at the premiere, saying "this [version of] Gordon Ramsay has true respect for the cultures of others and is eager to learn about new foods and techniques and what causes certain things to taste one way versus another."

Eater doubled down on that, if a bit more skeptically: "The good news, at least, is that the trailer seems to emphasize that Ramsay is trying to be a respectful traveler and absorb the local culture," the site explained, "as opposed to playing a game of oneupmanship with his hosts."

While most of the press around the new show has been along the same lines, there was a bit of controversy around the announcement of the show itself: Many claimed Uncharted was a straight rip-off of the late Anthony Bourdain's Parts Unknown and were upset Gordon would attempt something so similar.

When and on what network does the show air?

Gordon Ramsay: Uncharted will debut July 21 at 10 p.m. E.T. on National Geographic. It will continue to air every Sunday thereafter.
