This New Glamping Resort in New York's Catskills Will Have Chic A-frame Cabins — Here's a First Look Inside
On the heels of Eastwind Lake Placid, Eastwind Oliverea Valley will open in Big Indian, New York, on Jan. 6, 2023.
After a wave of glamping and hotel options popped up in New York's Catskills earlier this year, there’s about to be one more new boutique hotel to check into for a cozy winter getaway.
A sibling to Eastwind Windham in nearby Windham, New York, which debuted in 2018 and Eastwind Lake Placid, which opened this past August 2022, Eastwind Oliverea Valley will open on Jan. 6, 2023. It’s in the town of Big Indian, New York, 80 miles south of Albany and about a three-hour ride from Manhattan on the Taconic State Parkway. This is the first time Eastwind is doing an entirely new build, as opposed to taking over a pre-existing structure.

“As we’ve been in the Catskills for the better half of the last decade, we’ve been a part of the evolving and elevating landscape. When conceptualizing Eastwind Oliverea Valley, we wanted to incorporate elements that not only our loyal guests, but Catskills visitors have been craving more of: most notably, truly elevated cuisine,” Bjorn Boyer, Eastwind Hotels’ co-owner and co-founder, told Travel + Leisure exclusively. That includes bringing in Daniel Cipriani, a fellow co-founder, as chef for the all-day Dandelion Restaurant & Bar. Cipriani previously owned Urban Rustic, Lodge, Gemelli, Sea Wolf and Playland Motel, all in Brooklyn, New York, but this is his first venture outside NYC.
“After spending recent years exploring the Catskill and Adirondack mountains, getting in touch with nature, sharpening his foraging skills and building relationships with local farmers, [Cipriani’s] eager to offer a ‘forage-to-table,’ plant-forward, international comfort-food menu,” Boyer said.

At Dandelion restaurant, local trout will be seared in a cast-iron skillet and foraged ramp butter paired with crusty bread. Guests will enjoy local beers and ciders, such as Catskill Brewery’s IPA and Hudson North Cider Co.’s strawberry rhubarb cider, and after-dinner s’mores kits.

Like other Eastwind properties, guests will bunk in free-standing, wood-framed cabins. Cabins are outfitted with green–tiled showers, botanical-motif wallpaper, Persian-style rugs, and Frette bed linens. Pour-over coffee and in-room breakfast baskets further add to the leisurely stay.
“When designing Eastwind Oliverea Valley, we wanted to ensure guests feel enveloped in the Catskills’ natural beauty, even once indoors,” Boyer said. “Intentionally designed to balance — rather than take away from — the outdoors, we incorporated large windows providing ample natural light, high ceilings, clean minimalistic lines, and Earth tones and textures.”

New to the brand are the forthcoming Double Lushna accommodations. They're two side-by-side, 360-square-foot cabins connected via a private deck, perfect for a group traveling together. Each will feature a bath, shower, and queen-sized bed. In the Fern Suite, guests will find plenty of midcentury modern antiques and décor, like macramé wall hangings and an Eames-esque lounge chair set. The Fern Suite will be the only cabin with two beds. Some cabins will be pet-friendly (with an extra fee). There will also be Lower Valley King and Upper Valley King rooms, with a picture window at the foot of the bed, or King With Loft rooms featuring open layouts and — you guessed it — lofted beds.
No two cabins will be the same, but each will sport a Scandinavian minimalist aesthetic. “Vintage décor and furnishings provide a warmth that I always feel many hotels are missing. Each piece tells a distinct story — whether that be wooden picture frames, vintage prints of local flora and fauna, antique books, vintage chairs and Turkish rugs, or woven baskets,” says Julija Stoliarova, Eastwind Hotels’ co-owner and co-founder.

For the winter, snowshoes are available to explore the property and nearby trailheads. Guests can also warm up in one of two Scandinavian-style dry saunas, housed in wood barrel–shaped structures. And in the summer, guests will enjoy an in-ground pool (coming later in 2023), complimentary bicycle rentals, and hammocks to laze around in while admiring the natural surroundings.
