This classic cocktail works beautifully in ice form. Try making it with flavoured tonic such as elderflower or cucumber.

Prep time: 10 minutes, plus overnight freezing

Ingredients

  • 450ml tonic water

  • 65g caster sugar

  • 150ml gin

  • 16-24 thin cucumber slices

  • 16-24 mint leaves

Method

  1. Stir together the tonic water and sugar, stirring until the sugar has dissolved.

  2. Stir in the gin.

  3. Place 2-3 cucumber slices and mint leaves in each lolly mould and pour in the liquid.

  4. Freeze overnight until firm.
