Gin & tonic ice pops recipe
This classic cocktail works beautifully in ice form. Try making it with flavoured tonic such as elderflower or cucumber.

Prep time: 10 minutes, plus overnight freezing

Ingredients
450ml tonic water
65g caster sugar
150ml gin
16-24 thin cucumber slices
16-24 mint leaves
Method
Stir together the tonic water and sugar, stirring until the sugar has dissolved.
Stir in the gin.
Place 2-3 cucumber slices and mint leaves in each lolly mould and pour in the liquid.
Freeze overnight until firm.
