Giada De Laurentiis Says Her Fried Cannellini Beans Are ‘Deliciously Addicting’ & Make the Perfect Snack


Have you ever eaten a dish at a restaurant that you’ve dreamed about for days — even weeks — afterward? Giada De Laurentiis had that experience after trying out the fried cannellini beans at Il Buco al Mare in Amagansett, New York. They were so light, crispy, and flavorful that she just had to try to recreate them at home. Luckily for us, she’s sharing the recipe she came up with so we can all try out this dreamy dish.


“I had these incredible fried cannellini beans at Il Buco al Mare this summer and I thought about them so much that I decided to recreate the recipe,” De Laurentiis wrote in a recent Instagram caption. “Great as an app or a snack- just be careful bc they’re deliciously addicting!”

The cannellini beans are “barely battered in the lightest tempura-style crust,” De Laurentiis writes on her website, and perfect to serve as a snack or appetizer or as a garnish on soup.

To make the beans, you first have to cook the cannellini beans to perfection, which first requires soaking them overnight and then boiling them for about 40 minutes, removing the foam from the top of the saucepan as you go. De Laurentiis likes to cook her beans with a bit of garlic, sage, and bay leaf. When they’re thoroughly cooked, salt the beans and let them cool overnight.


Finally, you’re ready to fry. Coat the beans in a light dusting of rice flour before battering them in a mixture of rice flour, sparkling water, and salt. Place the battered beans in hot oil and allow them to crisp up to a golden brown then drain them on a paper towel before serving with some parsley and a wedge of lemon.
