Giada De Laurentiis Just Shared a Genius Way to Sneak Veggies Into Kids' Dinner

What’s for dinner tonight? Pasta? Again? Yeah, us, too — and we’re not mad at it.

If there’s anything we’ve learned in the kitchen throughout this quarantine, it’s that pasta is an amazing, versatile ingredient. Don’t have spaghetti sauce and meatballs? That’s alright, just combine with cheese, salt, and pepper to make cacio e pepe. But what we love most about pasta dishes is how incredibly easy it is to sneak veggies into the kids’ dinner. And our favorite recipe that does so is Food Network star Giada De Laurentiisaglio e olio with peas and prosciutto.

De Laurentiis recently made an appearance on Today to not only share an update on her life in quarantine (she’s been perfecting her TikTok dancing skills, at her 12-year-old daughter’s request) and share the dishes they’ve been making most while in quarantine (chocolate chip banana bread), but also share the recipe for her kid-friendly pasta with peas and prosciutto dish.

“When my Nonno Dino arrived in Capri, he always made pasta with olive oil and garlic – which translates to aglio e olio! I dressed it up in my spin on the dish with one of my favorite flavor combos: peas and prosciutto,” De Laurentiis wrote on her website, Giadzy.

To make the quick, beginner-level dish, start by cooking the prosciutto in a pan until it’s crispy. De Laurentiis likens the crispy prosciutto garnish to the bacon pieces on your salad.

Then, in the same skillet, cook garlic, and add the peas and pepper flakes. Boil water, toss in the pasta and cook. Once the pasta’s done, move it from the pasta water to the skillet with a little bit of pasta water and some Parmigiano-Reggiano cheese. Did that form a creamy sauce? Great, now add even more cheese and water.

And there you have it: In less than 30 minutes, an easy, family-friendly pasta dish that disguises veggies like a charm.
