Fort Collins pie food truck Sunny Sky Pies opens brick-and-mortar shop

After a year on the move, a pie food truck is setting up a more permanent home in Fort Collins.

Sunny Sky Pies has taken over 446 S. Link Lane and opened a community pie shop out of the space Wednesday.

Founder and baker Erin Margenau started Sunny Sky Pies out of her Fort Collins home under the Colorado Cottage Foods Act in 2021 and set up shop at the Larimer County Farmers' Market in downtown Fort Collins the following May.

This summer — after her husband, Mike, turned an old produce and bakery delivery van into Sunny Sky Pies' mobile pie shop — Margenau debuted the new food truck, bringing pies by the slice, pie à la mode, warm quiche and cinnamon rolls back to the downtown farmers market. The truck also made appearances at the City Park and Fossil Creek Park food truck rallies and community events like the Lagoon Summer Concert Series at Colorado State University.

After looking for a kitchen to expand into this summer, Margenau said she came across the Link Lane space, which was once home to Babette's Feast Catering & Bakery, Daddy Cakes Bakery and, most recently, the Burns and McCoy hot sauce company.

Sunny Sky Pies has a small dining area, coffee bar and place for customers to pick up orders. It sells pie by the slice, whole pies, quiche and cinnamon rolls, with Margenau adding that she plans to continue offering gluten-free, dairy-free, sugar-free and vegan options for customers with allergies or food preferences.

Sunny Sky Pies will also continue sourcing fruit for its pies from Ela Family Farms, a Hotchkiss, Colorado-based farm that also sells at the Larimer County Farmers' Market, Margenau said. Even the stickers she uses for pie labels and business cards for the shop come from local companies, she added.

"I've been (in Fort Collins) for 20 years and absolutely love it. I never want to live anywhere else," Margenau said. "I really want to support the community in any way I can."

Sunny Sky Pies is open from 11 a.m. to 6 p.m. Wednesday through Saturday and 10 a.m. to 3 p.m. Sunday.
