My kitchen looks fairly insane these days. I can barely count how many cutting boards, knives, and tools I have (and like to look at) but never use. The Seixas fridge? Lots going on there; too bad I can’t find what I need. Peer inside my freezer and you’ll swear it’s being used as a junk drawer, like the one you mindlessly toss stuff in and then completely forget about.

So it was time to consult someone who actually wrote a cookbook on how to prep, organize, and preserve your meals—while staying sane in the kitchen. Catherine McCord is a former model, actor, and TV host whose site Weelicious has amassed a large following for its no-nonsense, kid-friendly recipes. I recently spoke with her about her new cookbook, Meal Prep Magic, in hopes of walking away with some tips to get my kitchen in shape.

Robert Seixas: From one trained chef to another, I view Meal Prep Magic as an obsessive’s guide and roadmap to kitchen organization, and not just a cookbook.

Catherine McCord: It started with Covid and feeling and being trapped. I could barely go to the grocery store. I needed to see what I had in the kitchen and utilize ingredients to their potential.

You call the freezer “the most magical tool in your meal-prep arsenal.” Can you elaborate?

Beyond just preserving foods, the freezer gives you flexibility. But people have a hard time understanding how to freeze food, and what to freeze. My Freezer Stash Burritos are a good example. People love this recipe because they didn’t think you could freeze something like this. Some things I use to make retrieving things easier: Bins and labels. I actually use shoe bins.

Which would you rather buy two of: a second fridge or freezer?

I think a freezer. At home, we go through a lot of produce.

How would you describe yourself in the kitchen?

More free and easy going. You don't always have to white knuckle it to get through a recipe! You need to be fluid in the kitchen.

I accidentally started making it. I always use my rice cooker. I was playing around with cakes—black bean, quinoa cakes—and said why not? Call me queen of the mashups.
