Foil Packets with Sausage, Potatoes, and Peppers

These foil packet dinners are as great for camping as they are for an easy weeknight meal on the grill.

Serves 4 (serving size: 1 packet)

Ingredients

4 tablespoons unsalted butter, softened
1 teaspoon chopped fresh thyme leaves
3 garlic cloves, minced
1 medium-size sweet onion, halved and sliced in 1/2-in. slices
8 baby Yukon Gold potatoes, halved
1 large sweet potato, diced into 20 pieces
8 sweet mini peppers, halved
1 pound smoked sausage, cut in 1/2-in. slices
12 pickled jalapeño slices
1 lemon, cut into 8 slices
4 teaspoons olive oil, divided
1 1/2 teaspoons kosher salt, divided
1 teaspoon black pepper, divided
