  • 1 cup ricotta cheese

  • 1 medium-size Bartlett pear, thinly sliced

  • 1 cup firmly packed baby arugula

  • 1 cup thinly sliced Belgian endive (from 2 heads)

  • 2 teaspoons extra-virgin olive oil

  • 1 teaspoon fresh lemon juice

  • ¼ teaspoon kosher salt

  • ¼ teaspoon black pepper

Directions
