Date Nut Bread

For a mid-morning snack, dates give this loaf bread a natural sweetness, while walnuts add a crunchy texture.

Ingredients

  • 1 chopped pitted dates

  • 1/2 strongly brewed hot coffee

  • 1 whole-wheat flour

  • 1 all-purpose flour

  • 1 cinnamon

  • 1 baking powder

  • 1/2 baking soda

  • 1/4 salt

  • 7 unsalted butter, softened

  • 3/4 packed dark brown sugar

  • 1 unsweetened applesauce

  • 2 large eggs, lightly beaten

  • 1 vanilla extract

  • 1/2 walnuts, chopped

Directions

  1. Using an electric mixer on medium speed, beat butter and sugar, scraping down sides of bowl as needed, until light, about 3 minutes. Add applesauce, eggs, vanilla and reserved liquid from dates until well combined. (Don't worry if mixture looks curdled.) Reduce mixer speed to low and add flour mixture, dates and walnuts until just combined. Spread batter in prepared pan and bake until a cake tester inserted in center comes out with crumbs adhering to it, about 1 hour.
