A new CT restaurant promises only fresh food, from scratch sauces. No freezer either.

The new Connecticut restaurant promises no freezers.

A new fast/casual Salsa Fresca Mexican Grill opened Friday in Manchester at the Plaza at Buckland Hills, 1500 Pleasant Valley Road.

The Manchester grill is the 18th for the chain founded in 2008 by John Tucker, of a small town in New York.
The chain serves tacos, burritos, bowls, quesadillas, and more.

Tucker brought the concept to the northeast after falling in love with the taquerias in California, said company Chief Operating Officer Eric Friedman.

Friedman, recruited from a top job at Chipotle to lead Salsa Fresca, said, “We’re very excited,” about opening Manchester.

Friedman said he loves that the company is locally run, rather than by a big corporation and that 20 percent of the profits are given to every employee every quarter.

Friedman said the food is fresh, never frozen, cooked fresh every day, high quality and the sauces made in house from scratch.

Salsa Fresca has often been compared to Chipotle for style. At Salsa Fresca customers walk up to an area where the food is displayed and ordered. Customers either eat in the dining room or take food out.

Friedman said they are planning major expansion in the northeast.

The company uses environmentally-friendly materials in their packaging.

In addition to the newest eatery in Manchester Salsa Fresca’s Connecticut locations are in Newington, Avon, West Hartford, Danbury, Westport, Fairfield.

They also operate locations in the New York towns of Lagrangeville, Carmel, Yorktown, Bedford Hills, Cross River, Thornwood, Peekskill, Poughkeepsie, Fishkill, Newburgh, and Mamaroneck.

Later this month Salsa Fresca will open its 19th location in Brewster, NY.
