3/4 cup chopped multicolored mini bell peppers
4 teaspoons olive oil
1 1/2 pounds Yukon Gold potatoes, cut into 3/4-inch cubes
3 large eggs
2/3 cup olive oil mayonnaise
1/4 cup plain whole-milk Greek yogurt
1 tablespoon grainy or traditional Dijon mustard
2 teaspoons fresh lemon juice
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons chopped fresh dill
5/8 teaspoon kosher salt
1/2 teaspoon ground black pepper
