Cozy Up With Hot Toddy Cupcakes

With the temperatures dropping, there's nothing more comforting than a steaming mug of something boozy. Though I love a good mulled wine, and the occasional spiked cider, nothing tops a well made Hot Toddy. Typically a combination of whisky or bourbon, lemon juice, honey, and hot water, it's hard to beat. They're super warming and most importantly, they don't give me the dreaded sugar hangover I've become susceptible to in recent years.

Not unlike many of my favorite cocktails, we've turned this one into a delicious cupcake! It starts with a boxed cake mix doctored with some lemon juice and zest. I suggest using this lemon hack whenever you can, it really takes boxed cake mix to a more *sophisticated* place.

Next comes the buttercream, and it's a doozy. There's lots of butter and sugar, plus honey and whiskey for the token Toddy flavor. To cut the sweetness of the honey and powdered sugar, we snuck some sour cream in the frosting, and it makes all the difference. Pipe it on the cupcakes and top them with a lemon wedge and a dusting of cinnamon. Now that's a cupcake we can cozy up to!
