Costco’s New Prepared Pasta Is the Easy Fall Dish We've Been Waiting For

If you love butternut squash soup, this dish is “next level.”

November is here, along with its chill in the air. In much of the country, the farmers markets still running are no longer full of berries, tomatoes, or zucchini. The fresh produce you’ll likely see at your local market are apples and winter squash, including my favorite, butternut squash.

It’s delicious and versatile. Yes, I make butternut squash soup. I also roast the cubes as a side dish and add them as an ingredient in casseroles. It can be a main ingredient in pasta dishes like ravioli, and Costco’s latest heat-and-eat prepared meal made with butternut squash has people talking.

Costco’s New Cannelloni with Butternut Squash and Italian Sausage

On Instagram’s costcohotfinds page, Laura, the voice behind the account, described her latest Costco find as “seven cannelloni which are so soft and thin almost like a crepe with a gouda cream sauce, Italian sausage, squash, spinach and topped with Parmesan cheese.” Her video showed her digging into a plate full of cannelloni and eating it.

The butternut squash is cubed and on top of the cannelloni, along with sausage crumbles. The sauce looks plentiful. And I can almost smell it through my computer screen.

The dish is $5.99 per pound, and the package Laura picks up is marked $19.25, making it a little over 3 pounds of food. She covered and baked it in the oven at 400 degrees F (205 degrees C) for 30 to 35 minutes, then took the cover off and continued cooking for 10 to 15 minutes to brown the top.

“We had it for dinner this evening and my family of five all liked it! Huge win,” said one of her commenters. Another said, “It tastes like fall, yummy!!” And then there was the person who wanted it all to themself: “It's just amazing...really don't want to share it now at home.”

No one mentioned the spiciness of the sausage, but someone did compare the dish to butternut squash soup: “If you love butternut squash soup….this is next level.”

Most people were huge fans, but a couple of commenters mentioned that the sweetness of the butternut squash was not compatible with the herbs used. However, there were more votes for the dish than against it, which is promising because it does look fantastic—like the type of easy fall pasta dinner we’re all craving as the weather turns colder.
