Chef Rocco DiSpirito's special keto breakfast is guilt-free

Even with all the changes to the holidays this year, Chef Rocco DiSpirito says his family’s schedule stays packed. “Breakfast changed during quarantine,” he says, but it remains as important as ever. He says this recipe is, “jam-packed with protein, no sugar, and no gluten – a great way to start the day.”

ROCCO DISPIRITO: Hey, everybody. I'm Rocco DiSpirito. We're taking the Reset Your Breakfast Challenge. And today I'm making chocolate chip waffles, because they're Keto, they are sugar free, and they are delicious. All right, let me show you how to make them.

It's not that many ingredients. It's about 10 ingredients. It's kind of simple. We're just going to mix the wet ingredients. Make sure our waffle iron is on. We start with butter that has been melted in the microwave. We add it to the almond butter. We're going to mix these together until they're smooth.

The next thing that we do is add this mixture to our eggs. I'm going to add our vanilla extract to that. Non-caloric sweetener as well. As you can see, we've got sort of a thick, wet sand mixture here. Now I'm going to add salt and baking powder to my almond flour.

And then guess what? These two marry. We mix these two together. This is going to start to look like really dry sand and then we're going to add milk to it to make our batter.

And now we're going add chocolate chips. Good time to taste it. Tastes delicious.

Let's start by making one of our waffles. When you put it in the waffle maker, you just want to cover the center, you can see. And then flip it down. This one's taking a little longer because I made it really big. Let's check it. Oh, yeah, look at that. Ooh. Oh, beautiful.

Since it's hot, those chocolate chips are going to melt. And that's what it looks like.
