Chef Ludo Lefebvre Brings Beloved Take on French Cuisine to Cabo (Exclusive)

Costa Palmas, the beachfront resort community in Mexico, is partnering with Michelin star chef Ludo Lefebvre for a new day club. The property is opening Delphine, a day club with Lefebvre and day club curator Fabien Cerato.

Delphine will offer a spot for food, lounging and dancing for the entire Costa Palmas community including Four Seasons Resort Los Cabos and soon-to-be Aman Resorts guests, along with those who anchor via yacht.

Costa Palmas is a 1,500-acre residential and resort community on the East Cape of Los Cabos. The community – spearheaded by LA-based developers Irongate – includes the Four Seasons Resort and the still in the works Aman Resorts property, Amanvari, which plans to open in 2025 and features 20 two-story pavilions. Costa Palmas’ Marina Village also features the more casual residence offering, Casa Blake.

The open-air club will feature dining areas, daily entertainment, a bar and lounge areas with a beach atmosphere. Guests have the option to dine beachside in the sand or in the pavilion’s al fresco patio. Delphine will feature Niçoise cuisine using local fresh produce. According to Lefebvre, the process of creating the menu has been a “particularly fun process” for the French chef.

“Niçoise food is by far my favorite cuisine, so I came to the project with so much inspiration,” the chef told The Hollywood Reporter. “Being able to cook the food I love to eat the most has brought me so much joy.”

The dishes are driven by the seasons with spring and summer signature dishes like chopped chicory salad with walnut pesto and grilled Baja shrimp flambéed with pastis, along with classics like steak frites with herb butter. The spot will also feature handcrafted cocktails, premiums spirits and a hefty wine and champagne list.

Lefebvre says he first visited Costa Palmas about two and half years ago with his family. The chef said he “fell in love with the area,” making the decision to partner with the property a no brainer.

“When they approached me about partnering to create a French beach club, I immediately knew I had to do it,” Lefebvre said.

“My hope is to have Costa Palmas and Delphine guests feel like they have just stepped into a beach club in the South of France. The boats, the beach, the music and most importantly the food will transport our guests,” the chef later continued.

Lefebvre is well-known among the Los Angeles food scene. The French-trained chef is behind L.A. hotspot Petit Trois, both the original in Hollywood and the newer Sherman Oaks location, along with Denver restaurant Chez Maggy.

Delphine is expected to open in early summer 2024, operating from 11 a.m. to 7 p.m. After Delphine’s opening, Lefebvre plans to open a Casa Blake brasserie in the coming years.
