In case you haven't been paying attention, the leprechauns and green beer are about to descend upon us. That's right, St. Patrick's Day will be here before we know it, and while it isn't a major holiday in our house (with a ten-year-old, that means there are no gifts to open!) I do try to celebrate in the easiest way I know how—with food! This is a dish I first made a couple of years ago, and it's become my go-to meal every March 17.

While corned beef and cabbage is the traditional meal, this Irish stew recipe is a great alternative if you love to use your slow cooker on busy work days. Plus, if it's still cold at your house, it will warm your family up too! St. Patrick's Day Irish Stew Recipe

Ingredients

  • 2 lbs beef chuck roast, cubed

  • 2 large potatoes, peeled and diced

  • 2 cups diced carrots

  • 1 envelope onion soup mix

  • 2 (10¾ oz) cans tomato soup

  • 1 soup can water

  • 16 oz frozen peas

  • salt and pepper, to taste

  • parsley, for garnish

  1. Combine beef, potatoes, carrots, soup mix, tomato soup, can of water, salt and pepper in Crock Pot.

  2. Cook on LOW 8 hours.

  3. Add frozen peas and ¼ cup water.

  4. Cook on LOW 1 additional hour.

  5. Garnish with parsley.
