<p>Courtesy of Unsplash | Photo by Kevin Kelly</p><p><strong>Passaros</strong> <strong>“Vinho Verde” Loureiro, 2022</strong></p><p>This wine was chosen because of its refreshing light citrus and floral flavour. It pairs perfectly with the lighter amuse bouche that Chef Bruno Cavalho has planned - seared squid, cured pancetta, lump crab and Maldon Flakes. Passaros 2022 is an organic wine produced by Anselmo Mendes. You can taste hints of lemon peel, grapefruit and white blossoms, and it has a dry crisp finish.</p><p>Anselmo Mendes is recognized for his innovative spirit, his commitment to sustainability and respecting the land, and his wonderful wines. His winery was named one of the top 100 by Wine & Spirits in 2021. The vast majority of his wines are produced in the Vinho Verde region, one of the oldest regions for wine production in Portugal. He is well known for combining older techniques such as fermentation on skins with new methods such as fermentation of Alvarinho in oak casks.</p><p><strong>Colinas Do Avesso Private collection, single harvest Maceration - 2018</strong></p><p>This elegant, full body vinho verde wine produced by Quinta da Lixa gives off hints of citrus. plum and peach. Its dry finish pairs beautifully with the richness of Chef Bruno's Surf and Turf tartare of prime beef and tiger prawns. It was chosen for its body and rich flavors while remaining light and enjoyable to drink. </p><p>Quinta da Lixa has been owned and operated by the Meireles family since the mid-1980s. Over two decades, they invested in both additional land as well as developing the business from a bulk local winery to an international player producing beautiful wines with winemaker Carlos Teixera. The vineyards are located in the North West of Portugal in the Minho region. </p><p><strong>Conde de Vimioso Reserva 2020</strong></p><p>This deep garnet-red wine has a lot to offer. A blend of Touriga Nacional, Cabernet Sauvignon, Castelao and some Aragnez and Trincadeira, you can taste the prune and blackberries with an aroma of spice and minerals. It pairs perfectly with the earthy taste of the porcini ravioli. It was chosen for its expressive fruit that compliments this hand-made pasta dish.</p><p>Conde de Vimioso is the creation of the Falua estate in the Tejo region of Portugal (central region). The vineyard was founded in 1994 and they combine local indigenous grapes with international grape varieties to produce rich experiences with varying characters of terroir. Faula is committed to sustainability and putting Portuguese wines on the international stage.</p><p><strong>Paulo Da Silva “Cork Label” 2016</strong></p><p>This blend of Castelao and Tinta Miuda grapes from Paulo Da Silva has been aged for 36 months in neutral barrels. Its spicy full body, and black fruits are an excellent pairing for the beef cheeks, polenta and truffles dish being prepared by Chef Bruno. The wines' texture and tannins bring harmony and pair well with the richness of the dish.</p><p>Paulo da Silva is located in Colares, just outside Lisbon. Near to the Atlantic ocean, these grapes are grown on the dunes of Sintra. This is one of the oldest vineyards in Portugal and has undergone consistent development to bring the wine making capabilities up to modern standards. Wine from Colares is often associated with the highest quality, including being served at royal banquets or for important meals for international dignitaries at the Sintra National Palace.</p><p><strong>Dalva 20-Year-Old Dry White Port</strong></p><p>This beautiful 20-year old white port wine is special. It has notes of citrus, honey and golden raisins that pair well with aged parmesan cheese and its umami flavor. Most people know red port wines better so overlook this nutty and fruit balanced digestif that goes beautifully with hard cheeses. Chef Bruno and Pedro Veloso thought this would be a fun and engaging novelty for many. </p><p>This bright amber dry port is a blend of several white ports from the Dalva cellars that brings complexity and a delicate finish. It is aged in very old French oak barrels which gives you all the intense flavours. Dalva is a traditional Port wine house and was founded in 1862 by Clemente da Silva. The company is family owned and focuses on perfecting Port wine production with a wide array of styles and international distribution.</p><p><strong>Vertice “Millesime” Brut 2015</strong></p><p>This bubbly delight is a great way to end a celebratory night. It was chosen to add an air of fun with the final course. It is light, elegant and has an aroma of apple along with some red fruit. It adds structure and spice to the luscious crema bruciata planned for the Blue Fox dinner. It brings the fruit to the vanilla and pistachio flavors.</p><p>Located in Alijo, this vineyard benefits from the Mediterranean microclimate of the Cima-Corgo sub-region, producing fresh and aromatic sparkling wines among other things. Cave Transmontanas originally set out to focus only on making only premium sparkling wines. Started in the 1980s, they produced top-quality classically made sparkling wines in the Alto Douro region and then later started investing in making still wines too. This part of Portugal is hot and dry in the summer and then has harsh and cold winters with frost and snow.</p>

Just under two hours from Manhattan lies Blue Fox Motel, a 1950s mid-century boutique motel in Narrowsburg, New York that's been lovingly restored and renovated by business and life partners Meg Sullivan and Jorge Neves. They purchased the property in 2016 and spent over three years making sure every detail was perfect before officially opening it to the public. Due to COVID, the motel opening was delayed while the restaurant and bar was able to open via outdoor dining. The motel officially opened to the public in the fall of 2020 and has been a cornerstone for the community and a destination for travelers ever since.
