Cauliflower Tortillas Are Coming to Grocery Stores, and Eating Low-Carb Keeps Getting Better

Remember when everyone was like, "2018 is the year of cauliflower!"? And then as the year came to a close, everyone was speculating what 2019's vegetable would be. Well, you guys, I think it's cauliflower again. Barely two weeks into the new year, a new cauli-laden product-meant to be used to in place of a usually carb-laden product, as cauliflower is wont to do-has been announced. Drumroll, please? Cauliflower tortillas!

The tortillas come courtesy ofCAULIPOWER, known primarily for its pizza crusts. Since its launch, though, the company's product line has expanded to include ready-made frozen pizzas and cauliflower baking mixes, too. But back to those tortillas: They're launching in February at select supermarkets and on Amazon.

You'll be able to buy two versions-one that's grain-free and an "original" recipe. The original is gluten-free and vegan, and the main ingredients include cauliflower and non-GMO corn masa. The grain-free option is also gluten-free and includes cauliflower, chickpea flour, cassava flour, and pea protein among its ingredients. Those ones will have only 8 net carbs. Both should be kept frozen and can be reheated in a skillet or in the microwave like regular tortillas.
