1/2 cup apple cider
1/4 cup chicken broth
1 tablespoon whole-grain mustard
10 ounces (1-inch) French bread cubes
4 tablespoons olive oil, divided
4 cups chopped sweet onion
3 ounces chopped baby spinach
6 large eggs
2 cups whole milk
1/2 teaspoon dry mustard
6 ounces shredded Swiss cheese, divided
