Cake of the Day: Ricotta Strawberry Cake

If The Beatles baked a cake for their song ‘Strawberry Fields,’ it would look something like this — an eye-popping, mesmerizing strawberry dessert.

Husband-and-wife duo Brian Campbell and Elizabeth Stark, who we’ve also featured in our Blogger of the Week series, brings us today’s cake. They write and shoot beautiful, simple prepared dishes that highlight the season’s best ingredients on their popular recipe blog Brooklyn Supper.

Stark’s cake is easy to make and the key ingredients,“cornmeal, olive oil, and ricotta make for a rustic, crazy flavorful crumb,” she writes. After Stark bakes the cake to a golden brown, she spoons over the top an orange infused glaze. For a play on sweet and savory flavors she adds dollops of creamy ricotta. Fresh sliced strawberries decorate the top along with edible wild violets for pops of purple color.

The finished cake is “simple and rustic and celebratory, because it’s spring and I’m so glad you’re here.”
