Cake of the Day: Lemon, Coconut, and Strawberry Cake

Here’s the story of Sonali Ghosh: She grew up in Kolkata, India. She taught herself photography. She moved to Sydney. She became a successful banker. She became a mother of twin boys. She became a blogger. And that’s where we come in.

Sugar Et Al is Ghosh’s blog name, and it features recipes for sweet treats from popsicles to layer cakes. For the cake pictured here, she starts with lemon zest-heavy cake batter and adds shredded coconut for texture. Between each baked layer, Ghosh spreads strawberry jam and lemon meringue buttercream, the latter of which she also uses to coat the cake’s exterior. Then come more coconuts flakes fresh strawberries, and a pool of strawberry sauce.
