Packed with flavor and freshness and amped up with a homemade basil béchamel sauce, this lasagna is a perfect excuse to flex your home chef muscles. Ingredients

Lasagna

  • Olive oil

  • 1 ½ to 2 pounds butternut squash cubes

  • Salt and pepper

  • No-boil lasagna noodles

  • Cooked sweet sausage

  • Shredded mozzarella cheese

  • Grated parmesan cheese

Basil béchamel sauce

  • ¼ cup butter

  • ¼ cup all-purpose flour

  • 3 ½ cups whole milk

  • Pinch of ground nutmeg

  • ¾ cup lightly packed fresh basil leaves

  • Salt and pepper

  1. Heat 1 tablespoon of olive oil in a cast iron skillet over medium heat.

  1. Add the butternut squash cubes to the skillet, followed by ½ a cup of water.

  1. Add salt and pepper, then cover the skillet and simmer for 20 minutes.

  1. Transfer the squash to a mixing bowl and mash until smooth. Set aside.

  1. Make the béchamel sauce. In a saucepan, melt butter over medium heat. Then, add all-purpose flour and whole milk, whisking as you add the ingredients.

  1. Add a pinch of ground nutmeg, then let simmer for 5 minutes.

  1. Transfer half of the sauce to a blender, and add basil leaves and salt and pepper. Blend until smooth, then pour the sauce into a bowl and mix well. Set aside.

  1. Lightly butter a glass baking dish, then add a spoonful of sauce to the bottom of the dish and spread it evenly over the surface.

  1. Layer the lasagna noodles over the sauce.

  1. Add the mashed butternut squash on top of the noodles, making sure to evenly coat the noodles.

  1. Add the sausage on top of the squash, followed by shredded mozzarella.

  1. Repeat the layering process two more times, then top with grated parmesan.

  1. Bake covered at 375 degrees Fahrenheit for 40 minutes.

  1. Uncover and bake for another 15 minutes, then slice and enjoy!
