In cold winter months like these, there's nothing I want to do more than participate in a long, cozy brunch. Preferably in my apartment, where no contact with the outside world is needed. This brunch bread is the BEST dish for such events, when you want to cozy up with a carby, cheesy slice of something delicious.

In the past, I've been adamantly against using Bisquick in my recipes. I find it to have an oddly bitter taste, and makes the most deplorable pancakes of all time. While testing this recipe, I discovered I'm a much bigger fan of Bisquick than I thought. I'm gonna give the addition of maple syrup a lot of credit for this, the added sweetness helps balance the flavors and makes this bread completely addictive.

When you've made your dough (feel free to leave out bacon if you're veg) all that's left is making your eggs. I like including chives for a little added freshness to an otherwise considerably rich bread. A little hint: I highly recommend adding a squeeze of lemon juice to prevent the eggs from greying, a common result of baking them for an extended period of time. Scramble them slightly under your liking, they'll bake a bit more in the oven. In a loaf pan layer your dough with cheese, eggs, more cheese, and a final layer of dough. Brush it with butter and bake until the dough is slightly golden and let cool slightly before slicing. Cozy up and drift off into brunch bliss.
