Brittany Arnett of Toasted Table shares her appreciation for an intentional home-made meal

Food influencer Brittany Arnett (@toastedtable) was raised by a Syrian mother and Turkish father, so Middle Eastern cuisine plays a big role in her family. In this episode of ITK: Family Style, Brittany assists her mother in preparing a well-known, flavorful dish of grape leaves filled with meat, rice, and an array of traditional spices.

“The recipe that we’re making today is called ‘yaprak’ in some languages, or ‘dolma’ is probably the most common name used across the Middle East,” Brittany explains. “It’s basically a stuffed and rolled grape leaf.”

Brittany heads to the kitchen to prepare the dolma with her mom, following a traditional family recipe.

How to make dolma

Ingredients

  • One jar of grape leaves

  • Steak cut into ½” cubes

  • Medium-grain rice

  • Tomato paste

  • Lemon juice,

  • Seven-spice mix with salt, pepper, cumin, cinnamon, all-spice and clove)

  • Rack of lamb

  • Olive oil

  • Garlic

Instructions

To make dolma, start by stuffing the grape leaves with meat, rice, lemon juice, tomato paste and the seven-spice mix. Then, tightly roll the grape leaves into little cigar shapes.

Place the rolled grape leaves in a large pot with a rack of lamb and enough water so they’re all submerged, and cover tightly with a heat-proof plate to keep the grape leaves in place. Boil the water, bring it down to a simmer and continue simmering for two hours.

Once finished, flip the pot onto a large plate for everyone to enjoy.
