You'd have to be living under an extremely large rock not to realize how popular avocados are these days. Between guac (you know it costs extra) and avocado toast, the healthy fats are sweeping the nation like this generation's Beatles.

Here we've compiled three of our favorite ways to stuff avocados, for a healthy and satisfying lunch or snack. The best part? They're all 5 ingredients or less, so you can whip them up in no time for a great portable meal.

Let's start with breakfast. Avocado is a crucial part of some very classic breakfast dishes (hellooo chilaquiles) so it's only natural we made an eggy version. Ours has eggs scrambled with cheddar cheese and bacon bits, then garnished with chives. What better way to wake up in the morning?

Next, we have our chicken salad stuffing. Pretty classic but with a healthy twist: we swapped out mayo for Greek yogurt. It's lighter, fresher, and great for mayo-haters like myself.

Third, and my personal favorite, is the shrimp salad! Cooked and cooled chopped shrimp get mixed with bell pepper, corn, lemon juice and cilantro for a rainbow of bright and fresh flavors. Consider me officially on the avo bandwagon.
