Here on the East Coast, it’s been winter for approximately eight months. Saying that I’m “over it” is an understatement. I live under no less than four layers of clothing, I haven’t seen my legs in MONTHS, and I can’t even remember what iced coffee tastes like. Pray for me.

The best thing to do when the weather’s got you down is surround yourself with reminders of warmer times. That includes food, which is why these Bahama Mama cupcakes are really bringin’ the sunshine to my frostbitten heart. Based on the classic tropical cocktail made with multiple rums and tropical juices, you can make your own good vibes, with cupcakes!

To start, whip up a super simple cupcake batter consisting of: boxed vanilla cake mix, a can of Sprite, toasted coconut, and orange zest. While those are baking, whip up your boozy buttercream. Start with room temperature butter and whip until light and fluffy. Add powdered sugar and a splash of both pineapple juice and rum. When that’s whipped to a smooth and creamy consistency, pipe or spread onto your cupcakes and top with a wedge of orange, a maraschino cherry, and a colorful paper umbrella. Take a bite, kick back, and pretend that your phone didn’t just notify you that there is a severe wind warning.
