Bobby Flay's New Brunch Empanadas Are the Perfect Way to Use Up Your Holiday Leftovers

It’s the day after Christmas and our fridges are packed with leftover ham and turkey. While just reheating the extra food is an option, it can be tiring eating the same meal on repeat. Bobby Flay has the perfect solutions: turning your holiday leftovers into brunch enchiladas!

In a new video posted to the Foot Network YouTube Channel, Flay uses ham leftovers to make Egg and Ham Empanadas. First, he dices up the already baked ham and reheats it on the stove with butter. He makes eggs and adds it and some other ingredients to a bowl. He “very gently” folds them over. Once that’s ready, Flay sets it aside and gets ready to fill pre-made empanada crust, which he keeps ready to go in the freezer (an idea that is genius, btw!).

Once they are filled, he folds the empanada dough over and gently presses it closed with a fork. After a couple more easy steps, he bakes the empanadas for about 10 minutes. While those are in the oven, Flay whips up a homemade Piquillo Pepper Sauce to add a little spice to the breakfast.

“It’s brunch time!” he says as he takes a bite of the golden-brown meal. “Look at that, you got the ham, the egg, the goat cheese kind of running through there. And, you know, the pastry is really light and flaky. It just adds one more texture to your experience here. And the sauce just kinda wakes up the whole thing.” My mouth is watering just watching the video! Imagine how good this breakfast will smell and taste in your kitchen. It’s such a unique way to use up your leftovers that’s nothing like your traditional holiday meal.
