Olive oil cakes have been hugely popular on TikTok for months, thanks in part to Kylie Jenner posting about one from her local bakery. But olive oil cakes have had staying power due to their simple recipes and delicious taste.

PIERCE ABERNATHY: Olive oil cake is really having a moment right now. It's a really simple cake that highlights a few really good ingredients. Olive oil, it goes really well with citrus so it makes it a great cake for the summer.

My name is Pierce Abernathy. The vibe on my page is definitely a lot of vegetable forward dishes, a lot of small plates. I try to make food that I think looks good, tastes good, and is maybe something you haven't had before. Today, we're making my olive oil cake recipe, but we're doing a little bit of a twist on it. We'll be making a blood orange glaze to go on top of this, making it just a little more decadent.

The first thing we need to do with this olive oil cake is makes our dry ingredients. Flour, baking powder, baking soda, and we'll also be taking the zest of the blood orange mixing it in with our dry ingredients. Three eggs, sugar, olive oil, and then lastly, a half cup of milk of your choice.

Give that a mix. Once everything is all together, fold in your dry ingredients. Transfer this to a baking pan, and we'll bake it at 325 for one hour. Now, we are making the glaze. We're going to use powdered sugar. I'm also going to be using an amaro. Its flavors are kind of caramel-y and citrusy, and I think perfect for a blood orange cake.

Milk, and then the blood orange juice. Whisk this up. Look at that color there, too. Once your cake is out of the oven, you want to let it cool. Once it's cool enough to handle, you can glaze away. This is the fun part.
