Blackberry Cheesecake Cups

Mini-desserts allow for better portion control and are simply adorable to serve at a dinner party. These low-fat cheesecake cups use reduced-fat cream cheese and low-fat Greek yogurt for a healthier treat.

Yields: 12 cheesecake cups (serving size: 1 cheesecake cup, 1 tbsp. glaze, 2 to 4 berries)

Ingredients

  • 1 graham cracker crumbs

  • 1/2 sugar

  • 3 large egg whites

  • 2 8-oz. packages reduced-fat cream cheese, at room temperature

  • 2 all-purpose flour

  • 1 grated lemon zest

  • 1/2 low-fat plain Greek yogurt

  • 1 vanilla extract

  • 1 large egg

  • 1 pint blackberries

  • 1/2 seedless raspberry preserves

Directions

  1. Before serving, top each cheesecake with 2 to 4 blackberries. Mix remaining berries, preserves and 2 Tbsp. water in a small pan; bring to a boil over medium heat. Cook, stirring occasionally, until berries are soft and sauce has thickened, 3 to 4 minutes. Cool slightly. Spoon 1 Tbsp. glaze over berries.
