Sunset Toast

For one toast, you will need:
1 slice bread, toasted
3 tablespoons hummus
2 tablespoons cooked quinoa (I used tri-color quinoa)
1 slice from a small orange or yellow tomato
2-3 baby carrots, cut in quarters lengthwise
1/4 red bell pepper, cored and seeded, cut into long thin strips then each strip cut into thirds (to be about the same length as teh carrot pieces)

Spread hummus over the toast. Spoon quinoa on to the bottom third of the toast, over the hummus. Cut the tomato slice in half and place one half in the center of the toast above the quinoa. Cut the remaining tomato into long slender sections to be "rays." Place the tomatoes, carrots, and red peppers in a fan-like ray pattern all the way around the tomato. Transfer to a plate and serve.

Goldfish Toast

For one toast, you will need:
1 slice bread, toasted
3 tablespoons chia seed pudding
1 slice cantaloupe
1 orange slice (a whole slice not a segment)
1 blueberry

Spread chia seeds over the toast. Cut a fish body out of the cantaloupe then place on top of the chia seeds in the center of the toast. Use cantaloupe scraps to cut two long, slender "fin" shapes and place above and below the cantaloupe body. Make the tail by cutting three sections from the orange slice, remove the peel but leave the rounded shape. Cut and use remaining orange sections for top and bottom fins. Place orange pieces on toast to complete the fish body. Place the blueberry "eye." Transfer to a plate and serve.

Palm Tree Toast

For one toast, you will need:
1 slice bread, toasted
2 tablespoons peanut butter or other nut butter
2 tablespoons blueberry yogurt
1/3 pretzel rod
3 slices green apple
3 slices kiwi

Spread peanut butter over the bottom half of the toast. Spread blueberry yogurt over the other half of the toast. Place pretzel rod in the center of the toast, starting at the bottom in the peanut butter half, creating a palm tree trunk. Trim the apple and kiwi slices slightly so they form slender palm-leaf shapes. Place them on toast just above the pretzel rod in fan-like pattern as palm tree leaves. Transfer to a plate and serve.

Starfish Toast

For one toast, you will need:
1 slice bread, toasted
3 tablespoons hummus
1 tablespoon cooked red lentils
1 tablespoon shredded purple carrots
1 crumpet or English muffin, toasted

Spread hummus over toast. Place shredded purple carrots around the edge of the toast. Spoon lentils around the edge of toast inside and overlapping the carrots. Use a small star-shaped cookie cutter to cut 2 to 3 stars from the crumpet. Place cut stars on hummus in the center of the toast. Transfer to a plate and serve.
