We're In Love With Sweet Potato Egg In A Hole

Egg-in-a-holes, or egg in a basket, or, as my family calls them, "One-eyed Jacks", are a breakfast classic. At its most simple, it's a piece of bread with a hole cut in the center, an egg cracked in the hole, and cooked in a skillet with butter. It was one of my favorite breakfasts growing up, and it's still a major comfort food for me.

This twist on the classic dish swaps the bread for sweet potato, and we're not even mad. To start, slice your potato (the larger the better) into ½" to 1" strips. Toss them with olive oil and season them with salt and pepper. Throw 'em in the oven and let them bake until basically fork tender (a little resistance is ok). Next, use a biscuit cutter (or glass, or knife) to cut a nice little egg sized hole in the potato. That's where the egg goes!

The next part is a little up to interpretation. We added some white cheddar and bacon to the mix, but any toppings (or none at all) are totally up to you. Bake for 10 to 12 more minutes, depending on how you like you like your yolks, and it's breakfast time!
